Spark plug anti-seize didn't work
This caught my attention. Just how much torque did you use? I seem to recall a dim past memory about using maybe 20 ft/lb for auto spark plugs. Maybe a bit less with anti-seize. For me, I'm just glad

Suddenly changing CHT/Oil Temps
Did you also test the old probes? If not, then you're not looking at all the data. Doubtful ... Can't fix a problem until you know what the problem is. Maybe a third set of sensors, and / or meter(s).
